Ms. DeeAnn Sparks has been working on this igloo made out of milk jugs.  Way to go, girl!  It looks GREAT!  If you came for the Thanksgiving meal you saw it with the lights on.  Be sure to come by and see the stage if you have not seen it.  It is IMPRESSIVE!

BREAKFAST

 

 

 FREE RECIPE

 CRANBERRY WALNUT MUFFINS

Nonstick cooking spray

1 cup all-purpose flour

1/2 cup white whole-wheat flour

1/4 cup quick-cooking rolled oats

2 teaspoons baking powder

1/2 teaspoon ground cinnamon or apple pie spice

1/4 teaspoon salt

1 egg, lightly beaten

3/4 cup fat-free milk

1/2 cup sugar

3 tablespoons canola oil

1/3 cup dried cranberries, coarsely chopped

1/4 cup walnuts, toasted and chopped

DIRECTIONS

Preheat oven to 375 degrees F.  Coat twelve 2-1/2-inch muffin cups with nonstick spray or line with paper baking cups; set aside.

In a large bowl combine all-purpose and whole-wheat flour, oats, baking powder, cinnamon, and salt.  In a medium bowl combine egg, milk, sugar, and oil.  Add egg mixture all at once to flour mixture; stir just until combined.  Fold in the cranberries and toasted walnuts.  Spoon into prepared muffin cups.

Bake for 15 to 18 minutes or until tops are lightly browned and a toothpick inserted in centers comes out clean.  Cool muffins in pans for 5 minutes.  Remove muffins from pans.  Serve warm.  Makes 12 muffins.

NUTTY GORGONZOLA APPLE RINGS

2 tart green or red apples

Juice from half of a lemon (about 2 Tbs.)

1/2 8 oz. container whipped cream cheese

2 Tbs. dark honey

1/4 cup crumbled Gorgonzola

1/2 cup purchased candied nuts, chopped

DIRECTIONS

Core the apples and cut them horizontally into fairly thin rings and brush both sides of rings with lemon juice; set aside.

In a small bowl stir together cream cheese and honey.  Spoon cream cheese mixture into a small resealable plastic bag; seal bag.  Snip off a corner of the bag.  Pipe cream cheese mixture onto apple rings.  Sprinkle with Gorgonzola cheese and Candied Walnuts. Serve immediately or cover and chill for up to 2 hours.

 

 

FREE RECIPE

BUTTER-BRAISED RADISHES

1-3/4 lb. radishes, tops removed and reserved

1-1/2 Tbs. unsalted butter

2/3 cup chicken broth

1 Tbs. cider vinegar

1 tsp. sugar

Kosher salt

Trim the radishes and slice them crosswise into 1/3-inch-thick rounds.  Trim and discard the stems from a small handful of the tops, wash the leaves thoroughly, pat dry, and then finely chop enough to measure 2 Tbs.  (Save the rest of the tops for another use.)

In a 10" skillet, melt the butter over medium heat.  Add the radishes and cook, stirring occasionally, until they begin to soften, 5 to 7 minutes.  Add the broth.  Bring to a simmer, cover, and cook until the radishes are crisp-tender, 5 to 7 minutes.  Uncover, raise the heat to high, and add the vinegar, sugar, and 1/2 tsp. salt.  Cook, stirring occasionally, until the liquid is reduced to a glaze, 2 to 3 minutes.  Garnish with the chopped leaves and serve.

RAISIN BLONDIES

Yields sixteen 2x3 inch blondies

9 oz. raisins (2 cups)

6 oz. butter

2-1/2 cups all-purpose flour

3/4 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

2 cups packed brown sugar

2 eggs, beaten

1 tsp. pure vanilla extract

Let raisins soak in water until plump.  

Position a rack in the center of the oven and heat the oven to 350 degrees.  Butter the bottom and sides of a 9x13-inch baking pan, line the bottom with parchment, and then butter the parchment.

In a large bowl, whisk the flour, baking powder, baking soda, and salt.

In a 2-quart saucepan, melt the butter over medium-low heat; remove from the heat and let cool briefly.  Add the brown sugar to the pan and mix with a silicone spatula until thoroughly combined.  Add the eggs and vanilla and stir until combined.

Add the sugar mixture to the flour mixture, stirring with the spatula until just combined. Gently fold in the raisins.

Scrape the batter into the prepared pan, smooth the top, and tap the pan on the counter once or twice to break any air bubbles.  Bake until the top is golden-brown and a wooden skewer or toothpick inserted in the center comes out with just a few moist crumbs clinging to it, about 25 minutes.  Let cool completely in the pan on a wire rack.

Run a knife around the edge of the pan to loosen the blondies, invert onto a cutting board, remove the pan and parchment, and flip right side up.  Cut into 16 pieces and serve.

Did you notice local food in the cafeteria in August?  The USDA Farm to School initiative, coordinated by the Tennessee Department of Agriculture, worked with the Tennessee School Nutrition Association to encourage the inclusion of locally grown food in the school lunch program during the last week of August.  Efforts are continuing to make Tennessee products an integal part of the nutrition program.  What a great way to remind students that agriculture is vital to our daily lives!
